Well friends, it’s the time of year when pumpkins and pumpkin-spiced things begin to fill the stores and coffee shops. It’s always fun to watch TikTok and Instagram blow up with influencers racing to the local Starbucks for their Pumpkin Spice Latte. I do admit, it’s pretty delicious. So in honor of the Pumpkin Spice season, I thought I’d offer you a quick and easy fall treat you can whip up in no time. But I must warn you… it’s one you’re going to want to put on repeat.

01. The ingredients
You won’t believe me when I tell you that this recipe takes only a handful of ingredients. Here’s your shopping list: *Affiliate links*
- 1 spice cake – any brand
- 1 15 oz can of pumpkin puree – any brand
- 2 eggs
- 3 TBS water
- 1 tub of cream cheese frosting – any brand
- Biscoff cookies (optional)
- semi-sweet chocolate chips – any brand (optional)
- muffin liners
02. The instructions
Empty the spice cake mix into a bowl along with the eggs, the water, and the can of pumpkin puree. Mix all the ingredients until well combined. Fold in chocolate chips if you choose to include them Note: if the batter seems a little too thick, you may add another tablespoon of water to thin it down.
Spoon approximately 4 tablespoons of batter mixture into muffin liners and bake in a preheated 350(F) degree oven for 24-28 minutes. Note: Oven temperatures may vary, so watch the muffins carefully. My first batch took 28 minutes, but the second batch only took 25.
03. The finishing touches
Once muffins have cooled, frost with the cream cheese frosting. I left the muffins in the wrapper and only added about a teaspoon of frosting to each one.
Finally, if you’re feeling a little ‘extra,’ finely crush three Biscoff cookies and sprinkle on top of the cream cheese frosting.
